When I make a roast chicken, I sometimes use the carcass and the leftover chicken to make soup. I typically make a basic chicken and rice soup but recently decided to go looking for something different when I came across this Instant Pot + Crockpot Sunshine Lemon Chicken Chowder recipe from @realfoodwholelife who I follow on Instagram. I was skeptical as to how the cauliflower would go over with my family but I love anything with lemon so I decided it was worth the risk. Since I was using my chicken carcass I followed her crockpot recipe and then added my chicken and the broth I made from it at the end. I added extra lemon juice and I also love coconut flavor so I used the entire can of coconut milk. I’d suggest following her recipe and then adding more of each to suit your taste. The soup was a hit with the whole family (even the cauliflower!) so much so that they asked me to make it again the following week! Next time, I think I’ll try making it in the Instant Pot. My husband bought one a few months ago but for some reason, I’m scared of it. If you make it in the Instant Pot, let us know how it turns out!
P.S. We had a freshly baked loaf of sourdough bread with it - yummy.
